Your rear tires look pretty stretched, so I find it strange that your having issues rubbing with 285's in the back. I see many guys running 295's with less of a offset and they aren't having rubbing issues. I am asking because I was planning on running 295's in my rear with my new wheels, and they are ET28. I was planning on running a 5-10mm spacer, and I am also riding on H&R springs.

Car is on h&r springs with factory struts.

It does rub lightly with 4 adults on 60+mph bumps. Firming up the strut setting helps a bit.

Tires are 285 rear and 255 front

It only rubs on decent size bumps and only with 4 full size adults. Normally I just have two car seats in back and it never rubs with that.

I think the tire brand and model make a difference as well as to how the edge profile looks beyond the 285 tread width measurement.

I'm running Michelin pilot sport a/s3

I know that some others also run wider tires with smaller profile...
The previous owner had 305 by 25 on the car and it didn't rub...(different wheels though)

Most folks running over 285 are using lower profile heights

How wide is the wheel you're going to use? I was rubbing badly with 295/30/20 tyre in the rear on a 10" wide wheel ET22. ET28 with a 5-10mm spacer would be ET 23-18, which with a 10" wheel (or wider) would be a problem.
 
FWIW, I'm on 19x10 ET25 on Michelin PSS 305/30/19 with very very very slight rubbing on deep compressions only. I'm on coilovers, so I could always raise my suspension to eliminate all rubbing -- I ran 295/35/19s previously and never rubbed.
