If you look in the DIY section there are a good few threads with reference to changing the water pump and thermostat yourself. Given you've changed a HG on a car i would have thought this was easily within your capabilities.
An extra £400 for what is essentially a £50 part at most, and no other labour required as the stat has to come off to remove the pump tells you all you need to know about this greedy indy. Mind you at £800 for a water pump job that should have been immediatly obvious.
Have you tried CPC (http://cpcpe.com/)? They're London way and have a fairly legendary reputation, I've not used them myself (but the car has a bunch of receipts).
CPC in Amersham is where I'd go. Amersham is on the end of the Metropolitan tube line so not too much of a ball-ache dropping the car off and collecting if you're London-based.
When my water pump was replaced in August 2012 the total bill came to £549.78 + Vat, the pump itself came to £315.27 .... the thermostat was 194.92 + Vat to replace...
Both with the same garage at different times...
Hopefully gives you an idea although you may be suffering from the "London effect" when it comes to charges...
