I haven't tracked the car, but during the hot months, it seems to work fine. I note the 90 C degree T stat (built into the oil filter housing IIRC) seems to work, although there is a bit of delay from the reading to the opening. Seems to open closer to 98 or 99, then temp drops about 10 degrees almost immediately. Installer surmises simply slow reaction of the temp sensor to actual temps, but in all other respects, I have no issues.

I am just about to finish the removal of the under-plenum heat exchanger and the installation of the block-off kit, after which I'm forging ahead with the installation of the "Gulf" housing and a 16-row oil cooler behind the kidneys. One thing I noticed on the thermostat valve in the housing is the imprint "100 [degree symbol]". From this, I think the thermostat doesn't open until 212 degrees Fahrenheit, which sounds like it is consistent with your experience.

If it opens at 100C, and the temps drop 10C immediately, at what temp does it close? Does it cycle between 100 and 90?

Not sure, I don't normally see oil temps that high. I would guess there is about a 10 degree spread. If on track, I would think the cooler would stay open after maybe one cycle as the oil and water keep the heat up so it would not cool enough to close the oil cooler.
However, in the interest of science, I will try to do some SC pulls with the car, solely to generate some oil heat so I can answer your question!
