Cats On/off?

Has anyone had their cats taken out? If so what type off preformance gain is there, and is there a much nicer exhuast note?

I have been in an M5 with an aftermarket exhaust and no cats. Let me tell you, the car gains some power once they are off. But i did notice that they exhaust system more or less spits gas out the back. The smell of the exhaust is very rich.
