Is my Thermostat going?

Hey guys wanted some input. Its been brutally cold here in the northeast. Every start has been a cold start. Here's the thing, the car starts fine. It warms up reasonably quickly. I have no problem maintaining oil temps. However, the water temp, which usually should be dead center, is a little on the cold side. Sometimes, after spirited highway driving it reaches dead center but lately its just a little off. I just changed the hoses as they were old and going bad.

On my other cars a stuck open thermostat meant it was very very hard to warm up the car if at all. I'm not having that problem here. Is Old Man Winter just messing with me?
