I have had the very same problem on my 2001. 50.000 Km on the clock. It is NOT normal to have oil in the air intake system.
If you are interested I have posted information on the problem, the cure, BMW's attitude and actions (VERY positive for me) as well as additional problems following the first (not related to the Vanos problem).
The first post is called "Vanos Problem" and was submitted on the 28th of September 2004 Vanos problem .
The second was posted on the 12th of October and is called "Curse, curse,curse....Bad word". Curse, curse, curse....Bad word

I guess the last heading describes my feelings at the time

After reviewing your pics, I was going to warn you that the prior owner installed K&N gauze-type air filters and over-oiled them. I see the BMW Tech beat me to it.

Some dealers will void your warranty for the MAF's when they see this situation.

The K&N and other oil-based filters are not a good idea for BMW E39.

You're right, I replaced them with paper filters as recommended when I picked up the car after they fixed this. Even with the K&N's they replaced the MAFS since they had been coated with motor oil due to a problem not related to the air filters.

After taking out the K&N's I placed them on a cardboard box in my garage, and now it's completely soaked with the pink oil from the filters! It's no wonder MAFS get fouled from these things. However, I used to use a K&N filter in my Mustang Cobra and had no problems (that I know of). Maybe it used a differnt type of MAF sensor which was less prone to fouling.
