oil change for my m5 2001

Can somebody help with the oil change ,

1-on the manual it said 5W 30, at the dealer they put on my car 0w 40, now they told me to put 0w 30, Im very confuse because I THINK that because of our temperature in dominican republic(35celsius) I could go from 30w to 40w, but why you have to go from 5w to 0w. I need to know both viscocities.
2-when I also change the filter, how many quarts do I have to put in.

Neither oil they put in is approved by BMW. Have them put in only approved oil, in the correct, specified viscosity. Synthetic BMW, Castrol, or Mobil 1. 5W30 or 10W60.
