I assume you're asking with the idea that deleting two instead of four it would be quieter? Don't worry, removing all four it doesn't get as loud as you're thinking. And if anything, after deleting only two, you'll wish you did all four and possible cost yourself more removing the remaining 2.

Besides, the weight savings alone is like removing a fully grown Megan Fox from your car.

Been reading about horsepower/torque loss when going with the muffler delete vs. mufflers on 540's. Is this also an issue on the M5? I can't say I've noticed it.

I did the delete last year and I loved it immediately. After a bit I began to wish that I could turn it off when I wanted because I found it too loud for most city driving situations. That lasted a few months and now I'm over it. It sounds awesome and I think going back to normal would be depressing. I'm the guy who's always concerned about offending others (see: Canadian) so if I can get over it you can too. Delete is great.

Yes 3,5" will fit with stock diffuser, if there is no space between tips/pipes.

well instead of that just take off one box from each side and leave one on each side on so its not as loud

Do you see how they're constructed? Each muffler has it's own tip. Leaving one on each side would eliminate one tip, looking ridiculous IMO. It's not loud unless you want it loud. If you keep it under 3k RPMS (aka normal driving to me) it's a deep burble that isn't going to be offensive to anyone. It's only if you hammer it that you get the roar of the M5.
