My wife had two V70Rs, a 2004 and a 2005, the later one a 6spd manual. The M5 will simply run away from the R like the R is standing still. It's not even close. (V70R and S60R are almost identical in acceleration) I did extensive Gtimer runs of the V70R, and it is more of a match for my 2003 330i zhp than the M5. It's a bit faster than the 330i.
The R is AWD, but it is a funky FWD biased system with a very weak angle gear and a Haldex center "diff". It is very hard to launch as it wants to bog right away. You can do a 4000 rpm clutch dump (with DSTC full off of course) and it will chirp the front tires and then bog as the Haldex transfers power to the rear. With a bit of practice and just a tad of clutch slip, you can get it to launch pretty good. Even with the best technique, the M5 will just leave it behind and continue to open up the gap with speed.
The V70Rs were both very unreliable with the first one stranding my wife. Volvo ending up buying that one back, but our second one was almost as much trouble, so it was sold after a year. I did take the second one to VIR Full course, Grand Course, and South Course for a thorough flogging with R-comps and race pads however.

Numerous issues turned up such as the Haldex overheating and shutting down without warning. Not a good car to track if you're going to drive it to the limit of the track and car.

Easily and by a wide margin.
