That looks nice , i have to admit it , but i don't like "wasting" classic cars with putting non-orginals parts into them , even if they are technically better...

I agree with keeping original and relacing like for like, but in some circumstances, the shell is rebuildable, but the powerplant, and everything else is scrap, considering the value of good Mk2 Jags have plumeted in recent years, does it make sense to spend vast amounts of cash, producing a perfect example, only to find you are drastically out of pocket after the exercise, UNLESS, you are an enthusiast and follow the car your interested in closely, then go for it, I'm all for keeping them alive.
But these "amended" products are aimed at those that like the classic lines, but with modern reliability.

I like the M2 Jag, in fact my favourite would be a Dk Royal Blue Mk2 Coombes modified Jag of 68/69 vintage, with white/cream leather interior with full Coombes options such as Powrlok diff, rear arch lip exts, plus overdrive, bucket front seats, and full girling modded brakes, complete with wider chrome wires, lovely jubbly. (aaaarrrrrr, bring back the sweeny!! mk2's and Granada's)

I'm no purist, I don't like to see complete hack-jobs but I have no aversion to cleanly-done updates.

I don't think I'd want to do the V8 swap - I'd rather supercharge an old 4.2 XK motor, even if it means giving up 100HP, and the XK six is ~150-200lb heavier - but I'd like to know what was involved in putting the IRS under the Mark II structure. The later S-Type has the IRS, but it's a little less shapely.
